I'd like to find some classical pieces all rocked up with guitars. I've found an incredible canon rock duo which is absolutely astounding, and i've acquired a taste for them now, so if you know of any good ones, then please tell me because I love symphonic rock.

Apocalyptica is a Finnish cello quartet that got their start playing Metallica covers and now have their own material featuring lead singers of famous bands.
Worth checking out! Especially their covers of "Nothing Else Matters" and "One".

Mekong Delta is a Progressive Thrash Metal band from Germany that did their own rendition of Modest Mussorgsky's 'Pictures at an Exhibition.' The Prog. Rock band Emerson, Lake & Palmer also did something similar but not the entire piece. The Mekong Delta is the entire piece, I'm pretty sure.
