Halo's music is great. This one in particular from Halo 2 is one of my favorites:

BioShock probably has the best use of licensed music (besides Guitar Hero?) but even besides the licensed, the use of it's music is subtle and it just builds on an already excellent mood and atmosphere that you just don't get from video games.

"Simple and Clean"- Utada Hikaru (Kingdom Hearts anyone?)
Personally, I like the Japanese version better, called "Hikari", but both are pretty good.
