Well, doing a comprehensive enemy/boss list is hard to do (in a way).
It requires hacking of the game and then the extraction of enemy values. Not to hard in itself if you know what you're doing, but it's a tedious process that Max doesn't want to deal with right now.
Here is an enemy list (includes all information):

I'm a little stupid. I forgot you cannot hotlink faqs from Gamefaqs. Go click on each versions respective "enemy guide"
